Hello everyone, I know that you are looking at this blog post and thinking what is with her and the recent recipes that all seem to include Greek Salad. Well, I have two things to say about that, first the Classic Greek Salad is one of the most requested catering items and it is also the most requested recipe from all my customers and followers of my blog. Second, because this salad is loved so much, everyone is really loving all of my recipes on how to incorporate that delicious flavor into other dishes.

With that said, wait till you taste this recipe, especially if you like Pizza. Most of you Pizza lovers are aware of the hundreds of variations out there in the Pizza world today. Everyone loves pizza and today you will find just about any food item on a pizza from cheeseburger to chicken alfredo.

My passion for Pizza comes from my passion for food which comes from my passion to eat. I love so many different types of food and my taste buds do not discriminate between healthy and non-healthy cuisine! Pizza is a favorite of mine and I love them all even the Ooey… Gooey ones topped with “The Works”, of course, I also love the healthier versions with vegetables and greens.

These particular recipes seem to reach out to everyone’s taste buds. Especially those that love an authentic delicious Greek Salad with grilled Chicken. A craving that would have you traveling to your favorite Greek carryout in the middle of the night just to indulge in these flavors. Well, you will not only love the flavor, you will just die as your teeth sink through all these layers of goodness!

Greek Salad Pizza with Arugula & Grilled Chicken

Prep time: 20 min
Baking time: 30 min
Yield: 4 pita pizzas

Ingredients

  • 4 Pita Bread
  • 3 Tbsp. Extra Virgin Olive Oil (for brushing pita bread)
  • 1 Ball Fresh Mozzarella thinly sliced (shredded is ok too)
  • 3 Cups Feta Cheese
  • 3 Boneless Chicken Breasts (marinated recipe same as above)
  • 1 Pint Cherry Tomatoes (cut in half or 4 plum diced)
  • 1 Red Onion (chopped)
  • 1 Cup kalamata Olives rough dice
  • 1 Cucumber seeded and diced
  • 1 Green Pepper seeded and diced
  • 6 Pepperoncinis diced
  • ¼ Cup Olive Oil
  • 1 tbsp red wine vinegar
  • Salt and Pepper to taste
  • 3 Cups Chopped Arugula (you can certainly use romaine if your prefer)
  • Oregano (dried or fresh)

Directions

Line you pita on a pizza or sheet pan and brush with olive oil. Bake in a preheated 450° oven for about 5 minutes. Then top with a few slices of Mozzarella, top with sliced chicken. Top with a sprinkle of romaine or arugula. Combine the tomatoes through salt and pepper together in a bowl and mix well. Carefully place some of this mixture on top of the lettuce with a slotted spoon. Last add a few more slices of mozzarella and sprinkle with a little bit of oregano. Bake pizzas until cheese is melted and your mouth begins to water again!

Enjoy this scrumptious pizzas as appetizer, a main entrée, or if you are just craving, your favorite Greek Salad!
