Red peppers, so sweet, so tasty, so fragrant! Suitable for salads but also a main ingredient for many greek receipes. My sister Dimitra, in a moment of inspiration, added a few more ingredients to the peppers and so simple she created a delicious salad full of freshness and tampting taste! Well done my girl!
We will need…
- 8 red peppers
- 100 gr feta cheese
- 1-2 cloves of garlic
- 1/4 cup olive oil
- Vinegar
- Finely chopped parsley, just a little
- Salt
How to prepare…
Wash peppers and place them in a baking pan which is covered with aluminum foil. This is for your convenience because it’s a little difficult to clean the pan from the pepper juice. Bake in high temperature until they begin to turn black.
Place peppers in a plastic bag, before they cool.
Close the bag and let peppers to cool. The moisture that will be created inside the bag, will help us to peel the peppers easily.
Once they cool, remove skin, stalk and seeds.
Cut into pieces.
Put them in a bowl and add salt, olive oil and vinegar as much as you like and mix.
Add feta, garlic and parsley, one last stirring and it is ready.
